Coconut Milk Flan

We choose the Native Forest brand of coconut milk, which is Monkey Labor free. Much of the coconut milk sold still uses monkey labor where monkeys are chained up and forced to harvest coconuts for human consumption. Native Forest’s coconut milk is also one ingredient, coconut milk. No guar gum or other thickeners. They are not a sponsor, but we would welcome that 😉.
Flan is a canvas for any flavors you desire. We have tried citrus zest, cacao, chai spiced, banana, pumpkin and more! The photos below are of a pumpkin flan flavored with juniper, cinnamon, cloves, and coriander. Flan is typically served inverted on a plate once baked and cooled, with the caramel layer on the bottom of the dish becoming a sauce when plated. We use the maple syrup we produce each spring as the caramel layer as it is the best sweetener around!

Coconut Milk Flan
Ingredients:​
1 Can (13.5 FL OZ) Native Forest Coconut Milk
3 Pasture Raised Eggs
2 Tsp. Vanilla Extract
1 Tsp. Himalayan Pink Salt
¼ Cup Coconut Sugar
2 Tbl. Maple Syrup

Process​
1. Preheat your oven to 350 degrees. Combine all ingredients but maple syrup in a bowl and whisk to combine. Evenly distribute maple syrup in six 4 oz ramekins (pictured below). Once syrup is coating the bottom of the ramekins, gently ladle in the coconut milk mixture, leaving ¼ inch of space at top.
2. Place ramekins into a large 13” x 9” baking dish. Next comes the hot water bath- we use a tea kettle to bring water to a boil before pouring the water into the baking dish, bringing the water level to at least halfway up the ramekins. Place the baking dish into the oven and bake for around 25-30 minutes until the flan is set, slightly jiggly like jello when the baking dish is lightly shaken. Overbaking will result in a slightly scrambled texture. Below is a photo of a perfectly set flan.
3. Remove cooked flan from the hot water bath, and place in the refrigerator to allow it to cool fully. When ready to serve, run a knife around the edge of your ramekin, then place a plate face down on top of flan and invert the plate to reveal your creation! Serve with fresh berries or eat by itself!
